You can't think about New Mexico without thinking of chiles. The very word chilies is spelled a bit differently here! We put chile in everything! We carry chocolates, jellies and jams, candy, nuts, brittle, cornbread, beer bread and even popcorn with chile in it-- not to mention the more traditional barbecue sauces, marinades, salsas, soup mixes, spices, seasonings, and achiote paste. In fact, the "state question" is "Red or Green?" And if you answer with "Christmas", you'll get both red and green chile sauce with your meal!
